What is French Onion Chicken?

French Onion Chicken takes inspiration from classic French onion soup and turns it into a satisfying main dish. Caramelized onions are the star, bringing a natural sweetness that balances the sauce’s savory flavors.

The key is cooking the onions until they’re soft, golden, and deeply caramelized. This takes about 20 to 30 minutes, but the flavor they develop is worth the extra time. Keep the heat low and stir occasionally to help them cook evenly without burning.

Ingredient Notes

Here’s what you’ll need to make French Onion Chicken with a rich onion sauce and cheesy topping.

  • Butter: Adds richness to the onions and gives the sauce a smooth, buttery flavor.
  • Olive oil: Helps sear the chicken and keeps the butter from burning too quickly.
  • Chicken breasts: Pound or slice them to 1/2 inch thick or less for even cooking and tender bites.
  • Salt and pepper: Season the chicken and bring out the other ingredients’ flavors.
  • Yellow onions: Thin slices cook down until soft, golden, and sweet, creating the classic French onion flavor.
  • Dried thyme leaves: Add an earthy, savory note that complements the onions.
  • Bay leaves: Add extra depth as the sauce simmers. Remove them before serving.
  • Marsala or red wine: Adds richness and deepens the onion flavor.
  • Beef broth: Provides a savory base similar to classic French onion soup.

Finishing the Dish:

  • Softened butter: Blends with the flour to help thicken the sauce.
  • All-purpose flour: Thickens the sauce so it clings to the chicken and onions.
  • Grated Gruyère cheese: Melts into a creamy topping with a nutty, slightly salty flavor.

How to Make French Onion Chicken

French Onion Chicken makes an amazing Sunday dinner or special-occasion meal everyone will love. For full details on how to make French Onion Chicken, see the recipe card down below. Here is what you can expect when making this recipe:

Step 1: Cook Chicken

Place a large nonstick pan over medium heat and add 1 tablespoon of butter. Season both sides of the chicken with salt and pepper. Cook until browned and the internal temperature reaches 165°F. Transfer to a plate and cover with foil.

Pro Tip: Pound the chicken breasts to an even thickness before cooking so they cook evenly without drying out.

Step 2: Caramelize Onions

Add the remaining tablespoon of butter and olive oil to the same pan. Stir in the onions, thyme, bay leaves, salt, and pepper, coating everything in the butter and oil.

Cook over medium-low heat for 20 to 30 minutes, stirring occasionally, until the onions are soft, tender, and deeply golden. If they start browning before they soften, lower the heat and continue cooking.

Step 3: Make French Onion Gravy

Once the onions are tender and browned, pour in the Marsala wine to deglaze the pan, scraping up the browned bits from the bottom. Let it reduce by half.

Add the beef broth. In a small bowl, mash the softened butter and flour into a paste. Stir it into the pan and cook for about 1 minute, until the gravy begins to thicken. Reduce the heat to low.

Step 4: Choose Your Wine

Marsala, sherry, or red wine all work in this recipe. Marsala is my favorite here because its slightly sweet flavor pairs beautifully with the caramelized onions. Red wine gives the gravy a deeper, more robust flavor, while sherry adds a dry, nutty note.

Step 5: Return the Chicken to the Pan and Add Cheese

Add in chicken and cover to warm through, about 3 minutes. Add shredded Gruyère cheese to the chicken and cover to melt completely, another minute or two.

Why Gruyere Cheese?

Gruyère cheese is rich, creamy, salty, and nutty; don’t skimp on this ingredient…trust me.

Tips for Success

  • Use a wide skillet: A larger cooking surface lets the onions cook evenly instead of steaming in a crowded pan.
  • Watch the gravy thickness: Add the butter-flour paste gradually, stirring well between additions, so the gravy stays smooth without becoming too thick.
  • Scrape up the browned bits: When adding the wine, loosen the flavorful bits stuck to the pan. They add depth to the gravy.
  • Keep the heat low after adding cheese: High heat can make Gruyère oily or grainy. Cover the pan and let the cheese melt gently.
  • Taste before serving: After it thickens, check the gravy and adjust the salt and pepper as needed, especially since beef broth and Gruyère can be salty.
  • Let the chicken rest briefly: Once the cheese has melted, let the chicken rest for a couple of minutes before serving so the juices settle and the gravy clings to each piece.

Ingredients

  • 2 tablespoons butter divided
  • 1 tablespoon olive oil
  • 4 chicken breasts pounded or cut to be 1/2 inch thick (or less)
  • salt & pepper to taste
  • 2 whole yellow onions sliced thin
  • 1 teaspoon dried thyme leaves
  • 2 bay leaves
  • 1/2 cup marsala or red wine
  • 1 cup beef broth

Finishing the dish:

  • 1 tablespoon butter softened
  • 1 tablespoon all purpose flour
  • 4 ounces gruyere cheese grated

Instructions

  • Place large, nonstick pan over medium heat heat. Add 1 tablespoon butter to the pan. Sprinkle salt and pepper over both sides of the chicken. Add to the preheated pan and brown on both sides and thoroughly cooked to 165 degrees F. Transfer browned chicken to a plate and cover with foil.
  • To the hot pan, add other tablespoon butter and 1 tablespoon olive oil. Add onions, thyme, bay leaves, salt and pepper to the pan and stir to coat in spices, butter and oil. Cook slowly, stirring occasionally for 20-30 minutes or until completely soft and tender. If your onions are coloring before they are tenderizing, your heat may be too high. Reduce heat and continue cooking.
  • Once onions are completely tender and browned all the way though, deglaze pan with marsala wine and cook down by half (this shouldn’t take too long). Add in the beef broth. In a small bowl, stir butter and flour together to create a paste. Add to pan to thicken the gravy. Stir and cook 1 minute. Reduce heat to low.
  • Add in chicken and cover to warm through, about 3 minutes. Add shredded gruyere cheese to chicken and cover to melt completely, another minute or two.
  • Top chicken with dried parsley and cracked black pepper, if desired and serve hot.

Variations

You can easily change up this French Onion Chicken depending on what you have in the fridge or pantry. Here are a few simple ideas to try.

  • Use Swiss cheese: If you can’t find Gruyère, Swiss cheese melts well and works as a good substitute.
  • Swap the wine: Dry sherry or red wine works in place of Marsala, each adding its own flavor.
  • Leave out the wine: Use extra beef broth instead if you’d rather skip the alcohol.
  • Try chicken thighs: Swap the chicken breasts for boneless, skinless thighs, adjusting the cooking time as needed.
  • Add mushrooms: Toss sliced mushrooms into the pan with the onions for an extra savory flavor.
